Description

This Egg Bake Overnight Breakfast Casserole is a savory and customizable dish combining sausage, fresh vegetables, eggs, and cheese. It can be made ahead, baked immediately, or frozen for convenient meal prep, perfect for feeding a crowd or a hearty family breakfast.

Ingredients

Scale

Meat

  • 10 to 12 ounces sausage, casing removed

Vegetables

  • 2 cloves garlic, minced
  • 3 cups fresh spinach
  • 2 large bell peppers, diced
  • ½ medium yellow onion, diced

Dairy & Eggs

  • 12 large eggs
  • ½ cup milk, any type (120 g)
  • ½ cup shredded cheese, any flavor, divided (56 g)

Others

  • Olive oil, as needed
  • Salt and pepper, to taste

Instructions

  1. Prepare the casserole dish: Spray a 7 x 11" or 9 x 13" casserole dish with non-stick spray. Set aside. If baking immediately, preheat the oven to 375ºF (191ºC).
  2. Cook the sausage: In a large skillet over medium heat, brown the sausage until cooked through. Set aside by spooning the browned sausage evenly into the prepared casserole dish.
  3. Sauté the vegetables: Add olive oil to the same skillet if needed. Sauté minced garlic, spinach, diced bell peppers, and diced onion until tender and spinach is wilted, about 6-7 minutes. Season with salt and pepper during the last minute.
  4. Combine sausage and vegetables: Remove skillet from heat. Add the cooked vegetable mixture to the casserole dish containing the sausage and stir roughly to distribute evenly.
  5. Mix eggs and cheese: In a medium bowl, whisk together eggs, milk, and ¼ cup of shredded cheese. Pour this mixture evenly over the sausage and vegetables in the casserole dish. Sprinkle with the remaining ¼ cup cheese and add additional salt and pepper if desired.
  6. Bake the casserole: If not baking immediately, cover and refrigerate up to 24 hours. When ready, bake the casserole at 375ºF (191ºC) for approximately 45 minutes, or until edges start to brown. Allow to cool at least 15 minutes before serving.
  7. Store leftovers and freeze: Refrigerate leftovers up to 5 days. Reheat individual servings in the microwave as needed. For freezing, cover unbaked casserole tightly with plastic wrap and foil; freeze up to 2 months. Thaw overnight in the fridge and bake at 350ºF (177ºC) for about 20 minutes or until heated through.

Notes

  • This casserole can be baked immediately or prepared up to a day in advance for convenience.
  • Freezing unbaked casserole is a great way to have meals ready for busy mornings.
  • Customize with your favorite cheese or vegetables to suit taste preferences.
  • Use fully cooked sausage to save time; browning adds extra flavor.
  • Allowing the casserole to cool before serving improves texture and makes slicing easier.
