  • 2 tsp. paprika
  • 1 tsp. cumin powder

Stuffing

  • 4 oz. fresh baby spinach
  • 4 oz. cream cheese
  • 2 oz. feta cheese crumbles
  • 2 oz. shredded mozzarella cheese


Instructions

  1. Prepare the seasoning: Mix paprika, cumin powder, salt, and chili powder together in a small bowl and set aside for later use.
  2. Make the spinach stuffing: Roughly chop the fresh baby spinach and place it into a mixing bowl. Add the cream cheese, feta cheese crumbles, and shredded mozzarella. Massage the mixture with your hands until well combined and it forms a thick, creamy paste.
  3. Create pockets in chicken breasts: Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.
  4. Stuff the chicken breasts: Divide the spinach mixture into four equal parts and spoon each portion into the pockets of the chicken breasts. Secure the opening with toothpicks to keep the stuffing inside during cooking.
  5. Season and oil the chicken: Generously coat the outside of the stuffed chicken breasts with the prepared spice blend. Then brush olive oil over both sides of the chicken to help it brown and keep it juicy.
