Instructions
- Slice Zucchini Thinly: Slice the zucchini into thin ribbons approximately 1/8 inch thick. Bend a slice gently to confirm it’s flexible enough for weaving on skewers.
- Preheat Grill: Heat your grill to high temperature, around 450 to 500 degrees Fahrenheit, to prepare for quick grilling with a nice char.
- Season Zucchini: Lay the zucchini ribbons flat on a baking sheet. Brush lightly on both sides with olive oil, then sprinkle each side evenly with tajín seasoning.
- Weave Onto Skewers: Weave the seasoned zucchini ribbons onto skewers, layering them like ribbons to create attractive, textured skewers ready for grilling.
- Grill Zucchini Skewers: Place the skewers on the hot grill and cook for about 10 minutes total, turning 2 to 3 times to achieve even grilling, caramelization, and lovely charred bits without burning.
