Ingredients

Units Scale

Main Ingredients

  • 2 zucchini, sliced thin (approximately 1/8 inch thick)
  • 1/4 cup tajín, more or less to taste (or homemade tajín)
  • 1/4 cup olive oil for brushing +/-

Instructions

  1. Slice Zucchini Thinly: Slice the zucchini into thin ribbons approximately 1/8 inch thick. Bend a slice gently to confirm it’s flexible enough for weaving on skewers.
  2. Preheat Grill: Heat your grill to high temperature, around 450 to 500 degrees Fahrenheit, to prepare for quick grilling with a nice char.
  3. Season Zucchini: Lay the zucchini ribbons flat on a baking sheet. Brush lightly on both sides with olive oil, then sprinkle each side evenly with tajín seasoning.
  4. Weave Onto Skewers: Weave the seasoned zucchini ribbons onto skewers, layering them like ribbons to create attractive, textured skewers ready for grilling.
  5. Grill Zucchini Skewers: Place the skewers on the hot grill and cook for about 10 minutes total, turning 2 to 3 times to achieve even grilling, caramelization, and lovely charred bits without burning.

Notes

  • Use fresh, firm zucchinis for easier slicing and better texture.
  • If tajín is unavailable, mix chili powder, lime zest, and salt as a quick homemade substitute.
  • Brush the zucchini lightly with olive oil to avoid flare-ups and promote even grilling.
  • Adjust tajín quantity based on your preferred spice level.
  • Serve immediately to enjoy the zucchini’s tender yet crisp texture.
