Description

This Buffalo Chicken Dip is a creamy, spicy, and cheesy appetizer perfect for any party or gathering. Made with shredded chicken, cream cheese, Greek yogurt, hot sauce, and cheeses, it delivers bold flavors in a crowd-pleasing dish that’s easy to prepare and serve warm.

Ingredients

Units Scale

Main Ingredients

  • 3 cups (1 pound) shredded cooked chicken
  • 1 (8 ounce) block reduced-fat cream cheese, softened and cut into 1-inch cubes
  • 2 cups shredded part-skim Mozzarella cheese
  • 1 cup plain Greek yogurt
  • 1 cup hot sauce (I prefer Frank’s)
  • 1/2 cup crumbled blue cheese
  • 1/2 cup thinly-sliced green onions

Optional Toppings

  • Extra blue cheese
  • Extra green onions
  • Additional hot sauce

Instructions

  1. Prepare the ingredients: Softened the reduced-fat cream cheese by cutting it into 1-inch cubes to help it melt evenly. Shred the cooked chicken if not already shredded.
  2. Combine base ingredients: In a medium saucepan over medium heat, add the cream cheese cubes and plain Greek yogurt. Stir frequently until the mixture is smooth and creamy.
  3. Add shredded chicken and hot sauce: Stir in the shredded cooked chicken and hot sauce (Frank’s preferred) until fully incorporated and heated through.
  4. Mix in cheeses and green onions: Add shredded Mozzarella cheese, crumbled blue cheese, and sliced green onions. Stir until the cheeses melt and the dip becomes creamy and uniform in texture.
  5. Simmer and thicken: Continue cooking the dip over medium-low heat for about 10 minutes, stirring occasionally to prevent sticking and allow flavors to meld.
  6. Serve warm: Transfer the dip to a serving bowl or oven-safe dish. Garnish with optional extra blue cheese, green onions, and hot sauce if desired. Serve immediately with chips, celery sticks, or crackers.

Notes

  • For a thicker dip, bake in a preheated oven at 350°F for 10-15 minutes until bubbly and lightly golden on top.
  • Slow cooker option: Combine all ingredients in a slow cooker and cook on low for 2 hours, stirring occasionally.
  • Use cooked rotisserie chicken for easy prep.
  • Adjust hot sauce amount to taste for milder or spicier dip.
  • Serve with tortilla chips, celery sticks, or sliced baguette for best results.
