Instructions

  1. Cook the onion and chicken: Heat the olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken breasts. Cook for about 5 minutes, stirring occasionally, until the chicken is no longer pink and starts to brown slightly. Season with salt and black pepper. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and 2 cups of low sodium chicken broth. Mix well to combine all ingredients evenly.
  3. Cook the rice: Bring the mixture to a boil, then reduce heat to medium-low. Cover the skillet and cook for about 15 minutes, stirring occasionally, until the rice is fully cooked and tender. If the rice needs more liquid during cooking, add more chicken broth as necessary. Adjust seasoning to taste.
  4. Finish with broccoli and cheese: Add the broccoli florets and half of the cheddar cheese. Continue cooking uncovered for 2 more minutes until the broccoli softens slightly. Sprinkle the remaining cheese over the top and place the skillet under the broiler for 2-3 minutes until the cheese melts and begins to brown.
  5. Garnish and serve: Remove the skillet from heat, sprinkle with fresh chopped parsley, and serve hot.
