Description

Grilled lemon herb shrimp skewers marinated in a citrusy herb sauce make an easy and delicious weeknight dinner, bursting with fresh lemon, garlic, and parsley flavors.

Shrimp and Marinade

  • 1 pound extra large shrimp (peeled and deveined)
  • 1 bunch flat-leaf Italian parsley (tender stems ok, don’t use the thicker part)
  • 2 cloves garlic (peeled)
  • 1 tablespoon lemon zest
  • ½ cup extra-virgin olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon kosher salt (I use Diamond Crystal)
  • ¼ teaspoon black pepper

For Serving

  • Lemon wedges (if desired, for garnish)


Instructions

  1. Prepare the marinade: In a blender or food processor, combine the flat-leaf parsley, garlic cloves, lemon zest, olive oil, lemon juice, kosher salt, and black pepper. Blend until smooth to create a vibrant lemon herb marinade.
  2. Marinate the shrimp: Place the peeled and deveined shrimp in a large bowl and pour the lemon herb marinade over them. Toss to coat all the shrimp evenly. Cover and refrigerate for 10 minutes to allow the flavors to penetrate.
  3. Preheat the grill: Heat your grill to medium-high heat to prepare for cooking the shrimp skewers quickly and evenly.
  4. Thread the shrimp onto skewers: Remove the shrimp from the marinade, letting the excess drip off. Thread the shrimp onto skewers, making sure they are secure and evenly spaced for even grilling.
  5. Grill the shrimp: Place the shrimp skewers on the preheated grill. Cook for approximately 4 to 5 minutes, turning once halfway, until the shrimp are opaque, pink, and slightly charred on the edges.
  6. Serve: Remove the shrimp from the grill and transfer to a serving platter. Garnish with lemon wedges for a fresh citrus squeeze if desired. Serve immediately while hot.

Notes

  • Use extra-large shrimp for best texture and to avoid overcooking smaller shrimp.
  • Marinate shrimp for no longer than 30 minutes to prevent the acid from breaking down the texture too much.
  • Soak wooden skewers in water for 30 minutes beforehand to prevent burning on the grill.
  • If you don’t have a grill, shrimp can also be cooked on a grill pan or broiled in the oven.
  • Serve with a side of rice, salad, or crusty bread for a complete meal.
