Instructions

  1. Heat and sauté vegetables. Heat olive oil in a large saucepan or soup pot over medium-high heat. Add chopped onion, celery, and carrots and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional 30 seconds, stirring constantly to release the aroma.
  2. Add broth, chicken, and seasonings. Pour in the chicken broth, add the chicken breasts and season with oregano, thyme, salt, pepper, and the bay leaf. Bring the mixture to a boil.
  3. Simmer the soup. Reduce heat to low, cover the pot, and let the soup simmer gently for about 15 minutes, allowing the chicken to cook through and flavors to meld.
  4. Add orzo and cook. Stir in the uncooked orzo and continue cooking uncovered for 10 more minutes until orzo is al dente and the chicken is tender enough to shred.
  5. Shred chicken and finish soup. Remove the chicken breasts from the pot, shred or chop them into bite-sized pieces, and return them to the soup. Stir in the lemon zest, lemon juice, and chopped kale leaves. Cook a few minutes more until the kale is wilted.
