Ingredients
Scale
Liquid Ingredients
- 1 ¼ cups warm milk (110-115° F)
- 2 tablespoons honey
- 1 large egg (at room temperature)
- 1 ½ tablespoons melted butter
- 1 ½ tablespoons honey (for glaze)
Dry Ingredients
- 1 tablespoon granulated sugar
- 2 ¼ teaspoons active dry yeast (or one packet)
- 1 ¼ teaspoons salt
- 3 ¾ cups all-purpose flour (plus more as needed)
Fat
- 4 tablespoons unsalted butter (at room temperature, cut into cubes)
Instructions
- Activate Yeast: Place the warm milk in the bowl of a stand mixer or large bowl. Add granulated sugar and sprinkle yeast over the milk. Whisk gently and let sit for 5-10 minutes until the yeast foams and bubbles.
- Mix Wet Ingredients: Add honey, salt, and egg to the yeast mixture and mix gently to combine.
- Add Flour and Butter: Add 3 ¾ cups flour and mix on low with paddle attachment until mostly incorporated. Add butter cubes and continue mixing on low until butter is incorporated.
- Knead Dough: Switch to dough hook and knead on low speed for about 8 minutes until dough is smooth and slightly sticky. Add extra flour one tablespoon at a time if dough is too sticky but keep it slightly sticky for softness.
- First Rise: Transfer dough to a lightly oiled large bowl, turning to coat all sides. Cover with kitchen towel or plastic wrap and let rise in a warm place for 1 hour or until doubled in size.
- Prepare Baking Dish: Grease a 13x9-inch baking dish with cooking spray or butter.
- Shape Rolls: Transfer dough to a lightly floured surface, knead gently a few times. Cut dough into 24 equal pieces by dividing into 3 pieces, then each piece into 8 pieces. Shape each piece into a ball and place in baking dish.
- Second Rise: Cover rolls and let rise for 30 minutes until puffy.
- Preheat Oven: Preheat oven to 400 degrees F.
- Bake Rolls: Uncover and bake for 18 minutes until tops are golden brown and rolls are cooked through.
- Glaze Rolls: Whisk melted butter and honey together, then brush over warm rolls before serving.
Notes
- Use warm milk at 110-115°F to properly activate the yeast without killing it.
- Do not add too much flour; slightly sticky dough makes lighter, fluffier rolls.
- Allow both rises fully for best texture and volume.
- Brush rolls with honey butter immediately after baking for extra flavor and shine.
- Store leftovers in an airtight container and reheat gently to maintain softness.
