Description

  • 2 tablespoons honey
  • 1 large egg (at room temperature)
  • 1 ½ tablespoons melted butter

  • 1 tablespoon granulated sugar
  • 2 ¼ teaspoons active dry yeast (or one packet)
  • 1 ¼ teaspoons salt
  • 3 ¾ cups all-purpose flour (plus more as needed)

Instructions

  1. Activate Yeast: Place the warm milk in the bowl of a stand mixer or large bowl. Add granulated sugar and sprinkle yeast over the milk. Whisk gently and let sit for 5-10 minutes until the yeast foams and bubbles.
  2. Mix Wet Ingredients: Add honey, salt, and egg to the yeast mixture and mix gently to combine.
  3. Add Flour and Butter: Add 3 ¾ cups flour and mix on low with paddle attachment until mostly incorporated. Add butter cubes and continue mixing on low until butter is incorporated.
  4. Knead Dough: Switch to dough hook and knead on low speed for about 8 minutes until dough is smooth and slightly sticky. Add extra flour one tablespoon at a time if dough is too sticky but keep it slightly sticky for softness.
  5. First Rise: Transfer dough to a lightly oiled large bowl, turning to coat all sides. Cover with kitchen towel or plastic wrap and let rise in a warm place for 1 hour or until doubled in size.
  6. Prepare Baking Dish: Grease a 13x9-inch baking dish with cooking spray or butter.
  7. Shape Rolls: Transfer dough to a lightly floured surface, knead gently a few times. Cut dough into 24 equal pieces by dividing into 3 pieces, then each piece into 8 pieces. Shape each piece into a ball and place in baking dish.
  8. Second Rise: Cover rolls and let rise for 30 minutes until puffy.
  9. Preheat Oven: Preheat oven to 400 degrees F.
  10. Bake Rolls: Uncover and bake for 18 minutes until tops are golden brown and rolls are cooked through.
  11. Glaze Rolls: Whisk melted butter and honey together, then brush over warm rolls before serving.

  • Use warm milk at 110-115°F to properly activate the yeast without killing it.
  • Do not add too much flour; slightly sticky dough makes lighter, fluffier rolls.
