Description

Delicious honey glazed carrots roasted to perfection with a sweet and savory blend of honey, garlic, and warm spices. This easy sheet pan side dish offers tender, caramelized carrots with a fragrant glaze and optional fresh herbs for garnish, perfect to complement any meal.

Ingredients

Scale

Carrots

  • 2 pounds carrots (peeled)

Glaze

  • 1/4 cup honey
  • 3 garlic cloves (minced)
  • 2 tablespoons melted butter or ghee
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish

  • parsley, thyme or other herbs (optional)

Instructions

  1. Prepare carrots: Peel and dice the carrots, slicing them diagonally into 1 to 1.5 inch pieces. If carrots are large and thick, slice them in half lengthwise for uniform cooking.
  2. Toss with glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss thoroughly to coat the carrots evenly.
  3. Roast carrots: Spread the glazed carrots evenly on a sheet pan. Roast in a preheated oven at 425°F (220°C) for 25 minutes, tossing halfway through for even caramelization. Optionally, broil for 2-3 minutes at the end to brown the edges further.
  4. Serve: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or preferred fresh herbs if desired. Serve warm as a flavorful side dish.

Notes

  • Use fresh carrots and peel them for a smoother texture and better flavor absorption.
  • Adjust the amount of honey according to your preferred sweetness level.
  • Broiling briefly at the end adds appealing caramelized edges.
  • Substitute butter with ghee or a plant-based alternative to customize the recipe.
  • Fresh herbs like parsley and thyme enhance both appearance and flavor but are optional.
