- 2 lb Yukon Gold Potatoes
- 1/2 teaspoon Baking Soda
- 2 Tablespoons Kosher Salt

- 2 Tablespoons Fresh Rosemary (or a combination of herbs)
- 1 Tablespoon Butter

Instructions
- Prepare the Potatoes: Peel the Yukon Gold potatoes if desired and cut them into evenly sized chunks for even cooking.
- Boil with Baking Soda and Salt: Bring a large pot of water to a boil and add the baking soda and kosher salt. Add the potato chunks and parboil them until they are just tender but not falling apart, approximately 10-12 minutes.
- Drain and Rough Up: Drain the potatoes well and return them to the pot. Shake the pot gently to roughen the edges of the potatoes, which helps create a crispy crust when roasting.
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit for roasting the potatoes.
- Toss with Oil, Herbs, and Garlic: Place the potatoes in a roasting pan. Add vegetable oil, minced garlic, and fresh rosemary. Toss well to coat all potatoes evenly.
- Roast the Potatoes: Roast the potatoes in the preheated oven for about 60-75 minutes, turning them occasionally to ensure all sides become golden brown and crispy.
- Add Butter and Parsley: In the last 5 minutes of roasting, dot the potatoes with butter and sprinkle chopped fresh parsley over the top. Continue roasting until the butter melts and the parsley is fragrant.
- Serve: Remove from the oven and serve hot alongside your favorite main dishes.
