Instructions
- Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit remains stuck, carefully cut around it with a sharp knife and remove with a spoon.
- Preheat the grill: Heat a grill or grill pan over medium high heat. While heating, lightly brush the cut side of each peach half with olive oil to prevent sticking and enhance grill marks.
- Grill the peaches: Place peaches cut side down on the grill. Cook for 4 to 5 minutes until nice grill marks form and peaches soften slightly. Flip and cook for another 3 to 4 minutes on the skin side. Remove from heat.
- Assemble the dessert: When peaches are warm but easy to handle, arrange them on serving plates. Top each half with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, fresh mint, and a pinch of finishing salt if desired.
- Serve immediately: Serve the grilled peaches with ice cream while still slightly warm for the perfect contrast of temperatures and textures.

- Use freestone peaches for easier pitting but clingstone peaches work fine as well.
