Instructions

  1. Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit remains stuck, carefully cut around it with a sharp knife and remove with a spoon.
  2. Preheat the grill: Heat a grill or grill pan over medium high heat. While heating, lightly brush the cut side of each peach half with olive oil to prevent sticking and enhance grill marks.
  3. Grill the peaches: Place peaches cut side down on the grill. Cook for 4 to 5 minutes until nice grill marks form and peaches soften slightly. Flip and cook for another 3 to 4 minutes on the skin side. Remove from heat.
  4. Assemble the dessert: When peaches are warm but easy to handle, arrange them on serving plates. Top each half with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, fresh mint, and a pinch of finishing salt if desired.

  • Use freestone peaches for easier pitting but clingstone peaches work fine as well.
