Season with salt and pepper to taste. Remove the potatoes from the skillet and set aside.
- Cook Steak: Discard any burnt garlic and herbs from the skillet. Increase the heat to high and add the remaining 1/2 tablespoon of olive oil along with 1 tablespoon of butter. Add the sirloin steak cubes and sear for 6 minutes, stirring occasionally, until browned and cooked to your preferred doneness. Season with salt and pepper.
- Combine: Return the cooked potatoes to the skillet with the steak. Stir and cook together for 1 minute to heat through and allow flavors to meld. Serve immediately while hot.
