- 1/4 cup good vinegar (Champagne, sherry, or balsamic)
- 2/3 teaspoon salt
- 1/2 teaspoon Dijon mustard
- 1/2 clove garlic, finely minced (or 2 teaspoons minced shallots)
- 2 teaspoons honey
- 3/4 cup extra-virgin olive oil
- 1/4 teaspoon fresh ground pepper
- 1/2 teaspoon fresh chives, chopped
- 1/2 teaspoon fresh basil, chopped
- 1/2 teaspoon fresh parsley, chopped
Instructions
- Prepare the vinaigrette: In a small bowl, whisk together vinegar, salt, Dijon mustard, minced garlic or shallots, and honey until fully combined. Slowly drizzle in the extra-virgin olive oil while whisking continuously to emulsify the dressing. Stir in fresh ground pepper, chopped chives, basil, and parsley. Set aside to allow flavors to meld.
- Assemble the skewers: Take 8 skewers and thread on the ingredients in a repeating pattern: start with one green olive, followed by half a slice of Genoa salami, a mini mozzarella ball, a large basil leaf, a grape tomato, a cooked and cooled cheese tortellini, and finally a black olive. Repeat until all skewers are assembled.
- Dress the skewers: Arrange the assembled skewers on a serving platter. Generously brush or drizzle the prepared vinaigrette over each skewer to coat all ingredients evenly, enhancing the flavors.
- Chill and serve: Place the platter in the refrigerator for at least 15 minutes to let the vinaigrette soak into the ingredients slightly and the skewers to chill. Serve cold or at room temperature as a delightful finger food appetizer.
