Instructions

Roast in the preheated oven for approximately 50 minutes, or until the internal temperature reaches 135 degrees Fahrenheit for medium rare. Remove from oven and tent loosely with foil. Let rest for 15 minutes.
  3. Make the Gravy: While the roast is resting, melt the unsalted butter in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the flour and cook for 2 minutes, whisking constantly to form a roux.
