Ingredients
Scale
Potatoes and Oil
- 1 lb. (3 to 4) russet potatoes (leave skin on)
- 2 Tbsp. olive oil
Seasoning Mix
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground paprika
Garnish and Dips
- Chopped fresh chives (for garnish)
- Ranch dressing or bleu cheese dressing (for serving)
- Sriracha ketchup or regular ketchup (for serving)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees F. Line a large baking sheet with parchment paper and set aside.
- Prepare Potatoes: Rinse the russet potatoes and pat them dry thoroughly. Cut each potato into wedges and place them in a large bowl.
- Coat with Oil: Drizzle the potato wedges with olive oil, then toss them to ensure they are evenly coated.
- Mix Seasoning: In a small bowl, whisk together the grated Parmesan cheese, Italian seasoning, kosher salt, cracked black pepper, garlic powder, and ground paprika to form the seasoning mix.
- Season Potatoes: Sprinkle the seasoning mixture over the potato wedges, then toss everything together to coat the wedges evenly with the flavorful mix.
- Arrange and Bake: Spread the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not overcrowded. Bake in the preheated oven for 35 to 40 minutes, or until the wedges are tender inside and golden and crispy on the outside.
- Garnish and Serve: Remove the wedges from the oven and sprinkle with freshly chopped chives if desired. Transfer them to a serving platter and offer ranch dressing, bleu cheese dressing, sriracha ketchup, or regular ketchup as dipping sauces.
- Enjoy: Serve the crispy garlic Parmesan potato wedges warm and enjoy as a delicious side dish or snack.
Notes
- For crispier wedges, cut potatoes evenly and avoid overcrowding the baking sheet to allow proper air circulation.
- Leave the potato skins on for extra texture and nutrients.
- You can substitute Parmesan cheese with Pecorino Romano for a sharper flavor.
- Adjust seasoning to taste, especially the salt and paprika for your preferred intensity.
- If you prefer a healthier option, use less olive oil or try spraying the wedges lightly with cooking spray.
- Allow the wedges to rest for a few minutes after baking to help them crisp up further.
