Instructions

  1. Tenderize Shrimp: In a medium bowl, combine peeled and deveined shrimp with buttermilk. Let it sit for 10 minutes to tenderize the shrimp.
  2. Prepare Sauce: In a small bowl, mix together Japanese mayonnaise, sweet chili sauce, and sriracha. Set aside.
  3. Mix Coating: In a shallow bowl or baking sheet, whisk together cornstarch, salt, garlic powder, and black pepper until evenly combined.
  4. Coat Shrimp: Dredge the shrimp in the cornstarch mixture, coating both sides thoroughly for a crisp crust.
  5. Heat Oil: In a large 10-inch skillet or heavy bottom pan, heat vegetable oil over medium heat until it reaches about 350 degrees Fahrenheit or is hot enough for frying.
  6. Fry Shrimp: Fry the shrimp in batches to avoid overcrowding, cooking about 1.5 minutes per side until golden brown and crispy. Avoid overcooking to keep shrimp tender.
