Taquitos

  • 16 tortillas - fajita size flour, 6-inch corn, or 50/50 blend (corn tortillas for gluten-free option)

Instructions

  1. Prepare the Beef Filling: In a skillet over medium heat, cook the ground beef and diced onion until the beef is fully browned and the onions are softened, about 7-10 minutes. Drain any excess fat if needed.
  2. Add Seasoning and Chilies: Stir in the taco seasoning mix and the drained diced green chiles. Cook for another 2 minutes until the flavors combine and the mixture is heated through. Remove from heat and let cool slightly.
  3. Assemble the Taquitos: Lay out the tortillas on a flat surface. Place about 2 tablespoons of the beef mixture along the edge of each tortilla, then sprinkle with the grated sharp cheddar cheese. Carefully roll the tortillas tightly around the filling to form taquitos.
  4. Prepare for Air Frying: Spray the air fryer basket with avocado oil cooking spray. Place the rolled taquitos seam side down in a single layer in the basket. Lightly spray the top of the taquitos with avocado oil to help them crisp up.
