Beef Filling
- 1 pound 90% lean ground beef

Taquitos
- 16 tortillas - fajita size flour, 6-inch corn, or 50/50 blend (corn tortillas for gluten-free option)
- Avocado oil nonstick cooking spray (must be non-propellant)

Instructions
- Prepare the Beef Filling: In a skillet over medium heat, cook the ground beef and diced onion until the beef is fully browned and the onions are softened, about 7-10 minutes. Drain any excess fat if needed.
- Add Seasoning and Chilies: Stir in the taco seasoning mix and the drained diced green chiles. Cook for another 2 minutes until the flavors combine and the mixture is heated through. Remove from heat and let cool slightly.
- Assemble the Taquitos: Lay out the tortillas on a flat surface. Place about 2 tablespoons of the beef mixture along the edge of each tortilla, then sprinkle with the grated sharp cheddar cheese. Carefully roll the tortillas tightly around the filling to form taquitos.
- Prepare for Air Frying: Spray the air fryer basket with avocado oil cooking spray. Place the rolled taquitos seam side down in a single layer in the basket. Lightly spray the top of the taquitos with avocado oil to help them crisp up.
- Air Fry the Taquitos: Cook in the air fryer at 400 degrees Fahrenheit for 15-20 minutes, turning halfway through, until the taquitos are golden brown and crispy on all sides.
- Serve: Remove from the air fryer and let cool for a minute. Serve with sour cream, salsa, pico de gallo, guacamole, and shredded lettuce as desired.
