Description

This creamy garlic shrimp recipe is a delightful and rich dish featuring succulent shrimp cooked in a buttery garlic sauce, complemented by a luscious parmesan cream. Perfect served over rice, mashed potatoes, or polenta, it makes an elegant yet simple meal ready in just 15 minutes.

Ingredients

Scale

Shrimp

  • 2 tablespoons unsalted butter (26 g)
  • 1 pound raw shrimp, deveined and peeled (450 g)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Sauce

  • 2 cloves garlic, minced
  • 3/4 cup vegetable or chicken stock (180 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated parmesan cheese (43 g)
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Cook the Shrimp: In a skillet, melt the butter over medium heat. Add the shrimp and season them with salt and pepper. Cook the shrimp until they turn opaque and are cooked through, about 3 to 4 minutes. Remove the shrimp from the skillet and set aside.
  2. Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the vegetable or chicken stock and bring it to a simmer. Let it reduce slightly for about 3 minutes. Then add the heavy cream and continue simmering, stirring occasionally, until the sauce thickens, about 3 to 4 minutes. Stir in the grated parmesan cheese until melted and smooth.
  3. Combine: Return the cooked shrimp to the skillet and toss them in the creamy sauce to coat evenly. Adjust seasoning with more salt and pepper if needed. Garnish with chopped fresh parsley.
  4. Serve: Serve the creamy garlic shrimp hot over rice, mashed potatoes, or polenta for a comforting and flavorful meal.

Notes

  • Jumbo shrimp is recommended for best texture, but any shrimp size will work well.
  • For added richness and complexity, consider substituting part of the stock with white wine.
  • Prepare side dishes in advance so everything is ready when the shrimp is cooked.
  • Use freshly grated parmesan cheese for optimal flavor and creaminess.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently over low heat in a saucepan, thinning the sauce with a splash of water or stock if it thickens too much.
