Description

A hearty and comforting Hobo Casserole featuring layers of seasoned ground beef, sliced potatoes, creamy soups, and melted Colby Jack cheese, topped with crispy fried onions for a deliciously satisfying meal.

  • 1 pound lean ground beef
  • Salt to taste
  • Pepper to taste
  • ½ teaspoon all purpose seasoning
  • ½ teaspoon Worcestershire sauce

Vegetables and Dairy

  • 4 medium yellow potatoes
  • 8 oz Colby Jack cheese, freshly grated
  • ⅓ cup milk

Soup and Toppings

  • 10 ounce can cream of chicken soup
  • 10 ounce can cream of celery soup
  • ½ cup French’s fried onions


Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the casserole.
  2. Cook Ground Beef: Add the ground beef to a lightly greased 10-inch cast iron skillet. Break it up evenly and season with salt and pepper. Cook until browned and well combined.
  3. Layer Potatoes: Peel and slice the potatoes, then layer them evenly on top of the cooked ground beef in the skillet.
  4. Add Cheese: Sprinkle the freshly grated Colby Jack cheese evenly over the potato layer.
  5. Mix Soup Mixture: In a large bowl, combine the cream of chicken soup, cream of celery soup, milk, all purpose seasoning, and Worcestershire sauce. Whisk together until smooth and well blended.
  6. Pour Soup Mixture: Spoon the soup mixture evenly over the cheese layer and smooth it out gently with the back of the spoon.
  7. Cover and Bake: Cover the skillet tightly with aluminum foil. Place a baking sheet under the skillet to catch any spills. Bake in the preheated oven for 90 minutes.
  8. Add Fried Onions: Remove the foil and evenly sprinkle the French’s fried onions over the top of the casserole.
  9. Broil: Place the skillet under a hot broiler for 2-3 minutes until the fried onions turn golden brown and crispy.
  10. Garnish and Serve: Garnish with chopped green onions or parsley before serving to add freshness and color.

Notes

  • If you don’t have a large cast iron skillet, use a 9x13-inch casserole dish instead, following the same layering and baking instructions.
