Description

This Sheet Pan Baked Boursin Gnocchi is a simple yet indulgent one-pan meal featuring tender gnocchi roasted with zucchini, cherry tomatoes, and garlic, all brought together with creamy, melted Boursin cheese. It’s a cozy, flavorful dish perfect for a quick and comforting weeknight dinner.

Ingredients

Scale

Vegetables

  • 1 large zucchini, finely diced
  • 1 lb (500g) cherry tomatoes
  • 3 garlic cloves, sliced

Main Ingredients

  • 1 lb (500g) gnocchi
  • 1 round of Boursin cheese

Seasonings and Extras

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • A handful of basil, chopped
  • 1/2 cup parmesan, grated

Instructions

  1. Preheat and Prepare Pan: Heat your oven to 425°F (220°C) and grab a large oven dish or sheet pan, ideally around 14-inch by 9-inch so ingredients aren’t crowded.
  2. Arrange Ingredients: Place the cherry tomatoes, diced zucchini, sliced garlic, and gnocchi on the pan. Sprinkle the dried thyme and salt over everything, then drizzle with 2 tablespoons of olive oil. Mix well to coat everything evenly.
  3. Add Cheese: Make a small hole in the center of the mixture and nestle the round of Boursin cheese into it.
  4. Bake: Place the sheet pan in the oven and bake for 30 minutes until the tomatoes are charred and jammy, the gnocchi is golden on the edges, and the Boursin is deeply golden on top.
  5. Create Sauce: Remove from oven and use the back of a fork or spoon to press down the melted Boursin and tomatoes. Mix thoroughly with the gnocchi to form a creamy sauce.
  6. Finish and Serve: Scatter chopped basil and grated parmesan over the dish, mix once more, then divide into plates and serve hot.

Notes

  • This recipe requires only one pan, making cleanup quick and easy.
  • Gnocchi is baked directly without pre-boiling, saving time and adding a crispy texture.
  • The creamy Boursin cheese melts perfectly to create a rich, flavorful sauce with the roasted vegetables.
  • You can substitute basil with fresh parsley or oregano if preferred.
  • For a spicier kick, add a pinch of red pepper flakes before baking.
